The ancient recipe Sonninese wants using olives of Itrana cultivars that are asked in rattan baskets hung up in the chimney for about 20 days to smoke. After this treatment the olives, which are dry, black and shriveled are made softened in hot water and seasoned with oil, salt, juice and rind of lemon or orange, they can be stored for about a year. They are consumed as such or used in the preparation of cakes with vegetables, Parmesan, pizzas.
